project day twenty-three

colorful squash soup....i absolutely love this soup and it is so good too! my family loves it every time i make it....you should try it too.

you will need:

1 chicken fryer
13 cups water
6 med. carrots, chopped
1 1/2 lbs Kale, chopped
2 large onions, chopped
5 lbs Butternut squash, chopped
 salt and pepper

first, boil the whole fryer in the water. after it reaches a boil, lower temperature and simmer covered for one hour.  after the the hour, remove chicken from water, drain fat from water then return stalk to pot. add all ingredients and cook for an additional 30 minutes. pull the chicken from the bones and seperate the skin. take the meat and cut into bit sized pieces then add to soup. heat through and serve.  i like to serve mine with grissinni breadsticks.  yummy.
